Barista’s Corner

Grace's Take

While our barista is studying at SCAD (Savannah College of Art & Design) we asked her to give us a little insight into her experience at In Dietro Caffè.


"I've had the privilege of working on and off at In Dietro Caffè for over two years. Looking back on the first shift I ever worked, which was opening day, and the last just three weeks ago, it’s wild to see how much growth the business has had as a whole. Some changes were tangible and expected, such as different imports on the shelves and improved tools behind the bar. However, the changes that truly made the business as successful as it has become, were those in relationships. The longer we have been open, the more customers we called 'regulars'. And the staff group chat developed from professional and essential to mirroring conversations, jokes, and squabbles seen between siblings. This kind of work environment is not guaranteed, and I feel so lucky to have experienced it. I am proud of the family that grew through In Dietro Caffè, that I look forward to visiting during my breaks from college."

🇮🇹 Italian Idiom of the Month 🇮🇹

"Non tutte le ciambelle riescono col buco."

"Not all donuts come out with holes".


The origin of this saying comes from the making of traditional Italian doughnuts, or ciambelle. When preparing ciambelle, the dough is typically shaped into rings before being fried or baked. However, due to various factors, not every ciambella forms a perfectly round hole in the center during the cooking process. This saying reminds us that sometimes, despite our best efforts, things don’t turn out as expected.

☕ Coffee Fact

Quatro M del Caffè


A perfect cup of Italian coffee must satisfy what the Italians call the Quatro M del Caffe’ (the four M’s of coffee). These are:


• M for Miscela (blend) – the coffee blend used has an essential role.


• M for Macinadosatore (doser grinder) – this machine grinds the beans and measures out the right weight of coffee to make the perfect espresso. 

• M for Macchina per Espresso (espresso machine) – a complex machine that has undergone various developments and improvements over the last hundred years or so to serve you a perfect cup of Italian espresso every single time.

• M for Mano (hand) – the expert hand of the barista controls and fine tunes all the mechanical elements in order to produce the perfect cup of coffee. 

Ask Babbo

Babbo, I notice the lion heads on the door and the lion fountain, but what is that three legged thing above the fountain?

I'm glad you noticed. That is the Trinacria, which is the symbol of Sicily. Next time you are in Sicily (and I hope it is soon) you will notice the Trinacria everywhere. They come in many sizes and are often hand-painted in bright colors. The Sicilian flag also boasts this famous symbol.


The three legs represent Sicily's capes: Peloro in Messina, Passero in Syracusa, and Lilibeo in Marsala, thus creating a triangle. The winged head of Medusa symbolizes wisdom, protection and freedom and acts as a protective talisman that wards off evil and brings good luck. The three wheat ears represent the extreme fertility of the land of Sicily.

The Trinacria symbol is still rich with folklore, and Sicilians hold its traditions with love and loyalty.
